Add a Lock Screen widget
Touch and hold the Lock Screen, tap Customise, choose the widget area, find AND COUNTING and add the widget.

Create and save your counter in the app, then use Apple's Lock Screen or Home Screen customisation to place the widget.
Hide the phrase
Choose the Days-only presentation when you want the count visible without the phrase.
Count down instead
Use Until for a future date. On the target day the accepted product state resolves to TODAY / ARRIVED.
