Days Since measures the local calendar-day difference from a past date to today. Days Until measures the local calendar-day difference from today to a future date.
The calculation uses calendar dates rather than a running total of elapsed hours, so daylight-saving clock changes do not create a one-day drift. Your optional phrase is presentation only and does not change the calculation.
